For the lemon butter sauce you will need:
1/2 Cup Melted Butter
1/4 Cup Honey
1/4 Cup Lemon Juice
For the chicken scampi you will need:
4 Boneless Chicken Breasts (Cut into Thin Slices)
1 Onion Chopped
1 Teaspoon Fresh Minced Garlic
1 Green Chopped Red Pepper
1 lb. Thin Spaghetti
2 Tablespoons Olive Oil
1/2 Cup Sliced Cherry Tomatoes
Salt & Pepper
In a large pan, bring water to a boil, adding your spaghetti. Cook the pasta until it is tender, and then set aside to use later. In a saucepan, add your butter so that it begins to melt, stirring in your honey and lemon juice. When this has blended nicely together, set aside. Taking a large skillet or pan, combine your onion, garlic, pepper, tomatoes and chicken breasts. Cook over high heat with your olive oil for approximately 3 to 4 minutes, before moving it over to medium heat for another 15 to 20 minutes. Once everything has cooked and has turned nice and brown, add your honey butter mixture and stir-in well. Serve this dish warm with your favorite side!
